Rick Stein has recreated classic dishes from Venice to Istanbul for his brilliant new book and TV show.

The Paradise Beach Hotel, just outside the town of Vlorë, has good swimming and lovely seafood. This is an Italian dish, but I didn’t think it suffered by being made by a very engaging Albanian chef by the sea.
